Sister Zita's Butter Tarts
Pastry preparation:
- Measure 1 pound of lard
- Pour 1 cup of boiling water over lard and let sit for 20 minutes
- Add 5-6 cups of cake and pastry flour
- Add 1 teaspoon of salt and 1 teaspoon of baking powder
- Mix thoroughly
- Divide into tart shells and freeze
Filling preparation and baking:
- Melt 1 cup of butter and 3 cups of brown sugar
- Add 3 well beaten eggs and mix well
- Pour butter over 1/2 cup of washed raisins and mix well
- Add 1/2 cup of cream and 1/2 teaspoon of vanilla
- Mix well and chill overnight
- Fill tart shells 3/4 full
- Bake at 350 degrees for 30 minutes
